Scottish Light Ale Homebrew Recipe - Edward O'Connor

This is a homebrew beer I brewed one summer for a friend who loved Scottish beers. It has a slight peaty aroma and flavor, but is definitely balanced to the malt.

This isn't really a clone, but you could compare it to similar Scottish beers like Belhaven 60 or McEwans 60. These are Scottish session beers and only available in Scotland, so if you get a Scottish ale outside of Scotland, it is probably a higher alcohol version, like maybe an 80.

Ingredients

Malt Extract

  • 3.3 lbs Light Malt Syrup
  • 1 lb  Dry Malt Extract

Steeping Grains/Adjuncts

  • 4 oz        Caramel Pils 10
  • 4 oz        Caramel Munich 60
  • 2 oz        Peat Smoked Malt
  • 2 oz        Wheat Malt
  • 2 oz        Roasted Barley

Hops

  • .5 oz East Kent Goldings or Fuggles (UK)    added for 60 minutes (bittering)
  • .5 oz East Kent Goldings or Fuggles (UK)    added for 5 minutes (flavor/aroma)

Yeast

  • White Labs Edinburgh Scottish Ale Yeast (preferred) orSafAle S-04

Additives

  • 1 Whirfloc Tablet                                added during final 10 minutes of the boil
  • 4 oz Corn Sugar                                  at bottling

Notes:

Make sure you follow the extract instruction sheet or you will not get the hop bitterness you need.
